I kind of both love and hate that February is such a short month. I love that it's short because then it's usually our most miserable month in Dallas and once it's over spring is sure to be on the way, but on the other hand it goes by so quickly that it's hard to feel accomplished. I know, I know, it's only three days shy of a 31 one day month, but still. I also think that leap day should be an automatic holiday since it's technically a freebie that you don't get any other year, but what do I know?
So, I feel a bit sheepish telling you that half the pins I made this month were things that I have already made before. But they're still pins and they're still winners, so I'm going to count them. Unfortunately I failed to take camera pictures of any of these things.
1. Betty Crocker Meaty Spaghetti Sauce in the Crockpot (Scott's favorite meal evvvvvvvvvver)
2. Steel Cut Oats in the Crockpot (waterbath is my absolute favorite method now) The Pin
3. Ready to Go Breakfast Smoothies (still good but I need to try with Greek Yogurt) The Pin
I did work on three new pins this month--two food pins and one decorative pin. The decorative pin is a work in progress (read: will probably never be finished).
Enchilada Chicken Pasta from Pearls, Handcuffs, and Happy Hour. The recipe was really easy, especially since I had some frozen shredded chicken on hand, but the recipe calls for two cans of green enchilada sauce and a half can of red. I accidentally added two cans of red so I don't have a great sense of how this dish would have turned out without my mistake. I'd make it again but I'm not in a hurry to do so. The leftovers held up very well. Original Pin.
Smashed Crispy Potatoes from Caramel Potatoes. was one of the very first recipes that I pinned on Pinterest. The recipe says to roast the potatoes at 500 but since I was also cooking a chicken dish at 350 I had to make some modifications. Still, they turned out great and I do love crispy potatoes! I'll definitely make these again but with a little bit more seasoning. Original Pin. (I know--I could have taken the picture BEFORE we ate all the potatoes...sorry)
Finally is a large round mirror for my fireplace. The mirror is a concession because I couldn't find any other piece of art to place above the fireplace that would work with the size of the room and the other art pieces nearby. I still don't know exactly what to do about the accessories around the mirror--unfortunately decorating is not my thing. Basically I'm still waiting on Picky Jenn to come visit and do the house up nicely. Some Inspiration Pins.

Ok, one more finally. Even though I've already counted my hexes as a pin for last challenge, I did want to show you my progress because I think I'm over 200 hexes now! I know it doesn't look like it but there's quite a bit in that container. Lisa--aren't you proud of me?
Thank you so much to everyone who participated in the February Round of Pin it and Do it. Participate was slower this month (which meant it was easier for me to comment on posts!), but I'm still planning on continuing the challenge again in a few months. Maybe May? Afterall--April is next month! Either way, I hope you'll be back again! If you are still working on a wrap-up post, connect up tomorrow as I'm aiming for the 4th for the Round Up post.

I am the worst pinner/doer on earth! Maybe next round?????
ReplyDeleteI'm going to join in next time, I love to make Pinterest recipes.
ReplyDeleteI've never participated but I make things from my boards all the time! It's like the best filing cabinet for me but unlike that big metal monstrosity that sits in my basement office I actually open my Pinterest drawers...
ReplyDeleteI think you did great! When we moved into this house, I loved that I had a mantel that went all of the way across one end of the room (the fireplace is flanked by bookshelves). If you think decorating what you've got is tough, try one that long! I have rarely ended up with something I really love; usually I have three sets of things and I'll love the middle and hate the sides or love just one of the sides.
ReplyDeleteI really must try the steel cut oats in the crock pot!
ReplyDeleteThe chicken enchilada dish sounds good. I've never tried using red and green sauce together.
ReplyDeleteThe potatoes sound delicious!
ReplyDeleteOo, well done on the hexs! I love enchiladas, so a pasta sounds great. And less dry than eating it with tacos.
ReplyDeleteWow what a lot of hexs! I've done nothing pin worthy.
ReplyDeleteI love the mirror above the fireplace. Gorgeous.
ReplyDeleteLOL--I'm totally with you on Leap Day being a holiday! Seriously, how can anyone argue with your reasoning?!!
ReplyDeleteI love love love the fabrics you've chosen for your hexes!!! That is going to be one BEE-YOO-TEE-FULL quilt when it's done!!!
Hexes! Mine are still in little boxes because I can't bear to let them get mixed up. Sad, I know.
ReplyDeleteI actually did a few pins this month. Mostly cooking related, but some projects as well. The only one I've done twice is some chicken nuggets via Iowa Girl Eats which are supposed to be inspired by Chick Fil A. They are certainly tasty.
ReplyDeleteI need to look at more decorating pins. We've been in our house for a year and a half and most of the walls are still bare!
Yay, it looks like you are making very good progress with your hexes!
ReplyDeleteAnd your enchilada pasta looks delicious. All the pins I completed have been good but not incredibly photogenic; next time I'll pick prettier things to make.
Enchilada Chicken Pasta looks really good. I'm going to have to try that one.
